This photo journal highlights people I was priviledged to meet and places I was lucky to see during my recent trip to South Africa. (January 14 - 28, 2008) The purpose of my trip was two-fold: to attend a Sister Sojourner retreat and visit a "sister" hospice. I hope you enjoy time spent on this blog journey!

Brenda's Bran Muffins
Can almost taste 'em...
Bran Muffins:
2 1/2 cups flour
1 cup digestive bran
1 1/2 cups treacle sugar
1/2 teaspoons salt
1 teaspoon cinnamon
1 teaspoon bicarbonate of soda
1 teaspoon baking powder
1 cup fruit cake mix
Mix all dry ingredients.
Separate bowl, mix together the following:
3 eggs
2 cups milk
1 cup fish oil
1 teaspoon vanilla essence
Add to dry mixture and mix well.
place into muffin pans and bake 180C 1/2 hour.
